I'm happy to "settle" for Ghirardelli. ;) But I recently found that Dilettante Chocolates (think they're Seattle-based) sells bags of bulk couverture, bittersweet or semisweet, in the grocery stores here. My fudge recipes just got tastier!

I am a Philistine. I eat Hershey's Kisses and I love them. I have no idea of the cacao content of their Dark Kisses, I just eat 'em.

I almost never say no to chocolate, really. I regularly buy Dove Promises in dark chocolate for my fix--I like them best as "over the counter chocolate" goes. (Which is to say, easy to find and less expensive.)

Haha! Hotel Chocolat sounds like your kind of place, then. They have very high cocoa content milk and dark chocolates. For instance, check out The Purist's Library box.

My roommate will eat 99% cocoa chocolate. That's too much for me. It tastes ... like dirt. However, 70% is just about perfect for me. ^_^

Huh. I'm not sure I've ever tasted 99%, unless you count tasting the baking cocoa. :) 70% is great, though, yes. And a lot of people find *that* to be too much. Pshaw!

El Rey has many wonderful high-cocoa chocolates that have robust and nuanced flavors, often with undertones of tobacco, spice & smoke. You can get this at most Whole Food stores if you want a different spin.

That said, Ghirardelli Bittersweet is the one I most often use and it is an ATC favorite.

One of my favorite chocolatiers is Tim Gearhart of Gearharts Fine Chocolate (Charlottesville, VA). Yummy & special.

Rrmf, I should not look at such pages when I'm hungry. Yum! I think I've seen the El Rey chocolates around, or something like them. I've heard people comment, "Earl Grey flavored chocolate? Cumin flavored? Too weird for me," but I'm quite curious myself.

ATC...all-terrain chocolate?

Ah! :) I thought maybe "OTC," since I sometimes call cheaper and readily available stuff "over the counter" chocolate, but most people don't use the term...
